These are the last of my little Tommy-Toe/Pear tomatoes from this Summer.
I decided to roast them with some garlic and broccoli. Can’t go wrong there. Roasting veggies brings out the sweetness in them – keep this in mind with winter (yuck) tomatoes that you get from the grocery store.
Yum – I’m tasting the sweetness of the tomato, paired with the very mellow taste of the garlic and the broccoli is just wonderful.
- Tomatoes, sliced
- Garlic, sliced
- Broccoli, chopped
- Olive Oil for a good drizzle
- Salt & Pepper, to taste
Toss to combine; Roast in preheated 400 degree oven for 15 to 20 minutes.
